Straight from Finca El Paraíso in Cauca, Colombia, this Castillo coffee is grown at 1,960 metres above sea level, where careful cultivation meets some seriously creative coffee science. Don't let the name fool you: no lychees are added here! The magic comes from a carefully controlled fermentation process designed to bring out the coffee's naturally fruity character.
The cherries undergo 72 hours of anaerobic fermentation, followed by a second fermentation using a specially developed yellow-fruit yeast culture. A quick thermal shock helps preserve those delicate aromas before the beans are gently dried in a dehumidifier. Think of it as a little science experiment with a delicious ending!
In the cup, expect sweet aromas of caramel and yellow fruits, followed by juicy notes of apple, pear, and starfruit. Its bright, apple-like acidity and creamy body lead to a long, smooth finish with a lovely touch of apricot.
